Berber cooking in the heart of the Sahara
Cooked at the camp, every day, with local produce. Dinner and breakfast are included in your stay.
Dinner in the restaurant tent
Dinner is served in the restaurant tent, with Moroccan lamps and low tables, once the sun has gone down and the desert has fallen quiet. It is not a buffet: the food is cooked that same day in the camp kitchen and served at the table.
It starts with soup and Moroccan salads, shared in the middle of the table. Then comes the tagine, the main course. It ends with seasonal fruit and mint tea.
After dinner the evening carries on outside, around the fire, with Berber music. You do not have to go anywhere: it is a few steps from your tent.

What a tagine is
A tagine is both the dish and the pot it is cooked in: an earthenware pot with a distinctive conical lid. That lid sends the steam up, condenses it and drops it back onto the food, so everything cooks slowly in its own juices with very little water. It is the way people have always cooked in a land where water has never been plentiful.
Moroccan cooking is spiced, not hot: cumin, ginger, turmeric, cinnamon, saffron. If you prefer milder flavours, tell us and the kitchen will take it into account.
Breakfast, after sunrise
Many guests get up before the sun to watch it rise from the top of a dune. By the time you come back, breakfast is laid out: fresh bread, olive oil, jams, eggs, fruit, coffee and tea.
If you have to leave early for Fez, Marrakech or the airport, we serve it earlier. Tell us the night before and you will not have to choose between breakfast and being on time.

The bread and the tea
Moroccan bread, khobz, is baked daily and goes with the whole meal: in many homes it is also the cutlery, used to scoop the tagine straight from the sauce.
Mint tea is served at any hour: on arrival, after meals, by the fire. It is made with green tea, fresh mint and sugar, and poured from a height so it foams. It is how you are welcomed anywhere in Morocco, and in the desert it is drunk all day long.

Questions about the food
Are dinner and breakfast included in the price?
Yes. The tent price includes half board: dinner on the night you arrive and breakfast the next morning. There is nothing extra to pay for them.
Are there vegetarian or vegan options?
Yes. Tell us when you book and we prepare the whole menu, not just a side dish. Moroccan cooking has plenty of long-standing vegetable dishes, so it is not an improvised menu.
Can you adapt the menu for allergies or coeliac disease?
Yes, but we need to know before you arrive. Tell us exactly which allergy or intolerance you have when you book and we adapt the whole dinner, not just one course.
Is the food very spicy?
No. Moroccan cooking is spiced but not hot: cumin, ginger, turmeric or cinnamon, not chilli. If you would still rather have it milder, just tell us.
Can I have breakfast earlier if I leave at dawn?
Yes. If you have to set off early for Fez, Marrakech or the airport, we bring breakfast forward. Tell us the night before.
Can we have dinner outside, under the stars?
Yes. We set the table on the sand, with lanterns, just for you. Ask for it when you book so we have time to prepare it.
